    Pumpkin soup

 

 

A great dish for chilly autumn days, the spices and optional chorizo add an intense flavor that perfectly complements the typical sweetness of the pumpkin.

Instructions
1. Finely chop the pumpkin, onion, garlic and bell pepper.

2. Fry the chorizo and set aside.

3. Fry the onions and garlic, add the peppers and pumpkin.

4. Pour in the vegetable stock and simmer for 20 minutes.

5. Puree everything, season to taste and serve.

6. Add the crispy chorizo to the soup before serving.

* 1000 g Hokkaido pumpkin
* 1 onion
* 2 garlic cloves
* 750 ml vegetable stock
* 1 pinch of smoked paprika powder
* 1 red bell pepper
* 100 g chorizo
* 1 pinch of cinnamon
* 1 tbsp olive oil
* Salt and pepper to taste

◉ A few drops of olive oil for the finishing touch.

◉ Roasted pumpkin seeds for the perfect crunch.

◉ A dollop of crème fraîche or vegan cream for extra creaminess.

 

 

◉ For more heat: If you like it spicier, you can add a pinch of cayenne pepper or a fresh chilli pepper. This gives the soup a real kick!

◉ Even creamier: If you like a particularly creamy soup, you can add a dash of cream (or a vegan alternative such as oat cream) at the end. This enhances the velvety texture of the soup.

◉ Roast the pumpkin seeds: If you saved the seeds when preparing the pumpkin, you can roast them and use them as a garnish. Simply toast them in a pan with a little oil and salt until they are crispy – a great, healthy snack and perfect topping.

◉ Other toppings: If you want to make it extra elegant, try some toasted naan bread on the side or some crispy garlic-flavored croutons.
