2. Fry the prawns: While the pasta is cooking, heat 1 tbsp olive oil in a pan. Finely chop the garlic and fry it briefly in the oil until fragrant. Then add the prawns to the pan - fry them for about 2-3 minutes on each side until they are nicely pink and cooked through. Season the prawns with salt and pepper and, if you like it a little spicier, a pinch of chilli flakes.prepare the avocado cream: In the meantime, take care of the avocado cream: halve the ripe avocado, remove the stone and spoon the flesh into a bowl. Puree the avocado either with a fork or a hand blender until it is nice and creamy. Add the juice of the lemon to keep the cream fresh and season with salt and pepper to taste.
3. Bring everything together: When the pasta is ready, drain it (remember to keep some of the cooking water!) and mix it with the avocado cream in a large bowl. If the cream is too thick, you can add some of the cooking water to get a nice smooth sauce.
4. Add the prawns: Now add the fried prawns to the pasta and mix everything together carefully so that the flavors are well distributed.
5. Serve and garnish: The avocado and prawn pasta is now placed on two plates. Garnish the dish with some fresh basil and a hint of lemon zest to intensify the flavor.
