Because the pasta will continue to cook in the pan for a while afterwards, so it retains its perfect firmness to the bite. As soon as the pasta is ready, drain and set aside. A little tip: keep some of the cooking water in case you need to thin the sauce later.
2. Sauté the ham & vegetables: Now it's time for the Serrano ham - fry it in olive oil until nice and crispy. The combination of the ham and olive oil creates an irresistibly aromatic base. Once the ham is golden brown and crispy, add the peppers, onion and garlic. Fry everything together for 3-4 minutes until the onion is translucent and the bell pepper is soft.
